RECIPE For this recipe you can use any cream such as: • Heavy cream • Whipping cream • Ultra-high pasteurized 1. Place the cream WITHOUT any butter into a shallow microwave dish about halfway filled. 2. Microwave on full power at three 5-minute intervals checking the progress and making sure the cream doesn't spill over. I give it about a minute or two before I do the next 5 minutes. 3. Depending on the power of your microwave you may need to run a fourth time for about 2-3 minutes if the microwave is a smaller one. 4. It’s very important to keep an eye on the whole process as the cream may bubble over. Should it look like it will then just pause it for about 20 seconds and resume the cooking process. 5. Make sure to use oven gloves when removing from the microwave oven as the container will be extremely hot. 6. After 15 minutes (3 x 5-minute intervals) check to see if the clotted cream sets by placing a small amount onto a small dish into the freezer for 5 minutes or place a bit on a plate that was in the freezer. 7. Let the cream cool down for about 30 minutes. 8. Once ready simply chill in the fridge until completely set before serving. I normally leave it overnight in the fridge.
