Hi friends, how are you? today I propose you my recipe to prepare the high and soft homemade FOCACCIA WITHOUT MIXING! You will only use a bowl and a spoon and then you will only have to make a few folds of the high hydration dough. If you like a lower focaccia just use a larger pan.

Ingredients 🥣
600 g of type 0 flour (strength factor W 260-300) (protein 12 / 12.5)
Water at room temperature 480 ml
Fresh brewer's yeast 5 g (or dry yeast 2 g)
Salt 12 g
3 tablespoons of oil
Coarse salt, olive oil and rosemary
