I made macarons using egg whites, which are often left over from baking. I made a simple compote with small strawberries for jam and used the pulp for buttercream. As they are not sweet enough as they are, I adjust the sweetness with sweetened condensed milk. Strawberry syrup is made into strawberry milk to make a spring sweet plate. ▷Ingredients(15 - 20 macarons): ■Macaron shell 60g egg white 60g granulated sugar 70g ground almonds 80g powder sugar pink food color ■Strawberry butter cream 80g unsalted butter 200g strawberries 50g sugar 10ml lemon juice 80g strawberry pulp 35g ~ sweetened condensed milk ▷How to make: 1. make the macaroons. Sift together the ground almonds and powdered sugar. 2. Beat the egg whites with 30 g granulated sugar using a hand mixer. When the foam becomes fine, add another 30 g granulated sugar to make a glossy meringue. 3. Add pink food coloring and mix. 4. Sift about half of the mixture (1) and mix. Sift the rest of the ingredients and mix. 5. Scrape the dough gently into the bowl to make a macaronage. 6. Put the dough into a piping bag with a round tip, and squeeze out the dough in a round shape. Dry the macarons until the dough no longer sticks to the surface when gently touched. 7. Bake in a preheated oven at 130℃ for 15 to 20 minutes. 8. Make the strawberry milk buttercream. Measure unsalted butter and let it come to room temperature. 9. Combine washed and deveined strawberries, sugar and lemon juice in a saucepan over medium heat. 10. Cook, stirring constantly, until the strawberry pulp is softened. 11. Place the mixture in ice water to cool to 20℃, and weigh out 80g of the strawberry pulp. The syrup is strawberry milk. 12. Beat unsalted butter with a hand mixer to incorporate air. Adjust sweetness by adding sweetened condensed milk. 13. Put the buttercream into a squeeze bag and squeeze out onto macaroons. Thank you for always leaving comments.
