The physiology of digestion involves the coordinated action of the digestive organs, hormones, and enzymes. The process of digestion begins in the mouth, where food is mechanically broken down by chewing and mixed with saliva. Saliva contains an enzyme called amylase that begins to break down carbohydrates. From the mouth, food travels down the esophagus and into the stomach, where it is mixed with gastric juices. The stomach produces hydrochloric acid and enzymes that help break down proteins into smaller peptides. Next, the partially digested food moves into the small intestine, where it is further broken down by enzymes produced by the pancreas and the small intestine itself. The small intestine is also the site of nutrient absorption, where the small molecules resulting from digestion are absorbed into the bloodstream and transported to the liver. The liver plays a crucial role in digestion by producing bile, which is stored in the gallbladder and released into the small intestine to help break down fats. The remaining material, including fiber and waste products, moves into the large intestine, where water and electrolytes are absorbed. The large intestine also houses a diverse population of bacteria that help break down undigested material and produce vitamins. Finally, the waste products are eliminated from the body through the rectum and anus.
