This is a recipe for custard pudding cake, a popular snack at home. It is a firm pudding because it is made with milk instead of cream. It is low in calories, so you can eat plenty of it. LOL. Adding egg yolks to the pudding liquid makes it smooth and thick. I use the extra egg whites for sponge cake. The high egg white content makes it easy to whip and results in a sponge cake that is firm and high. ▷Ingredients (for one 7 x 16 cm pound cake pan) ■Caramel 1 tablespoon water 50 g granulated sugar 1 tablespoon water ■Custard pudding 3 whole eggs 1 egg yolk 60 g granulated sugar 350 ml milk 1 teaspoon vanilla extract ■Sponge cake 2 egg whites 40 g granulated sugar 1 egg yolk 35 g cake flour ▷How to make 1. make the caramel. Heat water and granulated sugar in a small saucepan over medium heat until caramelized. 2. Remove from heat and add water to loosen the caramel. Put the caramel into the mold. 3. Make the pudding liquid. Heat the milk in the pan in which the caramel was made until the caramel is melted. 4. Add 1 egg yolk to 3 whole eggs and mix until there are no lumps in the whites. Add the granulated sugar and mix as well. 5. Add the warmed milk and mix. 6. Make the sponge cake. Add granulated sugar to 2 egg whites in 2 batches to make a meringue. 7. Add 1 egg yolk and mix at low speed until uniform. 8. Add sifted cake flour and mix until powdery. 9. Strain the pudding mixture and put it into the container with the caramel. 10. Place the sponge cake on top of the pudding mixture. Pour hot water into a baking pad. Bake in a preheated oven at 160℃ for 20 minutes. Cover with aluminum foil and bake in a hot water bath at 150°C for 30 minutes. 11. Remove from heat and refrigerate. Thank you for always leaving comments.
