Ingredients: 15cm removable bottom pan (You can buy it at Daiso) <Tart dough> 85g biscuit 35g unsalted butter <Rare cheesecake> 200g cream cheese 60g sugar 200ml whipping cream 1tbsp lemon juice 8g gelatin 2tbsp water(to soak the gelatin) 40~60g strawberry jam <Carnation chocolate> 200g white chocolate Coloring (Red) for chocolate Instructions: 1. Put the biscuits in a freezer bag and crush them into small pieces with a rolling pin. Note: The finer you crush it, the cleaner it will be. 2. Put the butter in a heatproof container and heat in a microwave at 600W for 40 seconds. 3. Add the melted butter to the bowl with the crushed biscuits and mix well 4. Place the biscuits in a mold and chill in the refrigerator for about an hour. 5. Add water to gelatin for rare cheesecake and let it soak. 6. Add cream cheese that have been returned to room temperature, sugar, whipping cream, lemon juice, and strawberry jam in that order, and mix well each time. 7. Heat the softened gelatin in the microwave for 30 seconds to dissolve it, then add it and mix. 8. Pour it into a mold that has been chilled in the refrigerator, and chill in the refrigerator for at least 2 hours. 9. Melt white chocolate for carnation in a bowl over hot water, and temper it. Note: The temperature of tempering of white chocolate is melting temperature: 40-45 ℃ (104-113℉), lowering temperature 26-27 ℃ (78-80℉), heat retention temperature: 28-29 ℃ (82-84℉). 10. Color it pink with chocolate coloring (red). Note: Strawberry chocolate or ruby chocolate can be used as a substitute. 11. Spray rubbing alcohol on a stainless tray, spread an OPP film, and remove the air with a scraper. 12. Pour the chocolate onto a slightly chilled tray in the refrigerator and stretch it with a palette knife. 13. Let the chocolate harden at room temperature until it no longer sticks to your fingers, then make the petals. Note: The key is how hard the chocolate is. If it is too hard or too soft, it will not turn out well, so find out when the chocolate is no longer sticking to your fingers. Note: It may be useful to have 3-4 stainless steel bats, as it takes time to harden the chocolate. 14. While attaching your left hand to the scraper, sharpen it at once to make it fan-shaped.
