For the mold preparation, brush the molds with the room temp, soft butter and chill them in the fridge until the butter is set. Dust the molds with some flour and tap off the excess flour (dusting with flour is not necessary if you use non-stick or silicone molds). Stick the molds in the fridge until ready to use. Preheat the oven at 200°C / 390°F. 2. For the batter, place the egg whites, pistachio paste and salt in a mixing bowl and mix with a whisk until well combined. 3. Sift in the powdered sugar, cake flour and pistachio powder and stir well. 4. Brown the butter in a pot then cool it slightly before adding it to the batter. Add some vanilla oil or extract if you wish. 5. Fill the molds with the batter until it reaches about 80% of the height. Bake them in the preheated oven for 10-11 mins. Unmold the financiers when slightly cooled, arrange them on a wire rack and let them cool completely. 6. For the toppings, put the chocolates together in a cup and melt them in a hot water bath. Transfer the mixture in a piping bag and drizzle over the financiers. Sprinkle the chopped pistachios and raspberry flakes before the chocolate mixture is set.
